Crispy Rolls with Anchovies, Mozzarella, and Capers

Preheat the oven to 200°C.
Tip: No salt is needed – there's enough in the anchovies and capers.

Line a baking sheet with parchment paper and place two lavash breads on it.

Whisk the eggs with a fork until smooth.

Brush each lavash with egg, slightly lifting the edges to prevent the liquid from running off.

Dice the tomato into small cubes and distribute over the lavash breads.

Tear or slice the mozzarella and place it on top.

Add finely chopped pickled pepper.

Arrange the anchovy fillets, then the capers and pickled onion.

Bake for 10 minutes.

Check for doneness: the egg should be fully set and not liquid. If the surface is still wet, return the lavash breads to the oven for another 2–4 minutes.

Remove from the oven, let stand for about a minute, then tightly roll each lavash into a spiral.
